Ingredients
Crust:
2 cups all-purpose flour
2 teaspoons cane sugar
1 1/4 teaspoons salt
2/3 cup canola oil
3 tablespoons whole milk
1/4 cup light brown sugar
1/4 cup cane sugar
2 teaspoons all-purpose flour
Custard Pie Filling:
3 large eggs
1 teaspoon vanilla extract
1 teaspoon caramel extract
1 3/4 cups whole milk
3 tablespoons cane sugar
1 teaspoon salt
1/2 teaspoon ground nutmeg
Instructions
Pre-heat the oven to 350°F.
Crust: Mix together 2 cups flour, 2 teaspoons cane sugar, and salt. In a separate bowl, whisk together the oil and milk. Add the oil mixture to the dry ingredients, and stir with a fork until the flour is all moistened. Press the dough evenly into an un-greased 9-inch pie plate. In a small mixing bowl, mix the brown sugar, 1/4 cup cane sugar, and 2 teaspoons flour together. Press this mixture into the crust.
Custard Pie Filling: In a large mixing bowl, mix together the eggs, vanilla, caramel extract, milk, sugar, and salt. Pour the mixture into the pie crust. Sprinkle the top with ground nutmeg.
Bake for 45 minutes to 1 hour or until a knife inserted in the center comes out clean. Let it cool on a wire rack.
