Ingredients
Crust
2 cups graham cracker crumbs
¼ cup brown sugar
¼ tsp cinnamon
6 tbsp unsalted butter, melted
Cheesecake
3 packages cream cheese at room temperature, 8 oz each
1 cup granulated sugar
1 tsp vanilla extract
3 large eggs
One oven-safe turkey bag
Instructions
Crust:
Preheat the oven to 350º F.
If using whole graham crackers, pulse them in a blender until fine. Combine the crumbs with brown sugar, cinnamon, and melted butter.
Press the mixture into an 8 or 9-inch springform pan and pre-bake for 8-10 minutes or until golden.
Let cool to room temperature.
Cheesecake:
Reduce oven temperature to 325º F. Place the pan inside an oven-safe bag, leaving it open at the top.
Beat cream cheese until smooth, mix in sugar and vanilla. Add eggs one at a time, then beat for an additional minute.
Pour the mixture over the crust and place in a water bath.
Bake for 60-70 minutes until the center is set but still slightly wobbly.
Turn off the oven, remove from water bath, and let cool in the oven with the door cracked for 60-90 minutes.
Chill in the fridge overnight.
