Ingredients

1 tablespoon vegetable or canola oil
1 1/2 pounds boneless, skinless chicken thighs
1 teaspoon kosher salt
1/3 cup mirin
1/3 cup sake
1/4 cup soy sauce or tamari
1/4 cup water
2 tablespoons packed light or dark brown sugar
1 tablespoon cornstarch
1 medium scallion, thinly sliced (optional)
White sesame seeds, for garnish (optional)
Steamed white rice and cooked broccoli, for serving


Instructions

Heat 1 tablespoon oil in a large frying pan over medium-high heat until shimmering. Pat the chicken dry and season with salt.
Cook chicken in a single layer until browned, about 4-6 minutes. Combine mirin, sake, soy sauce, water, and brown sugar in a bowl.
Mix 2 tablespoons of sauce with cornstarch. Flip the chicken, add remaining sauce, and simmer 5-10 minutes.
Whisk cornstarch mixture, add to pan, and cook until thickened. Slice chicken, serve with sauce, scallions, sesame seeds, rice, and broccoli.
