Description

Porcupine Meatballs are a classic dish that brings together the heartiness of ground beef and the unique texture of rice, all smothered in a tangy tomato sauce. This dish is perfect for those who appreciate a savory meal that is both comforting and straightforward to prepare. The meatballs have a delightful texture, thanks to the rice that pokes out, resembling little porcupine quills, hence the name.

Ingredients

Scale

1 lb ground beef
1/2 cup uncooked white rice
1/2 cup water
1/3 cup chopped onion
1 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon ground black pepper
1 (15 oz) can of tomato sauce
1 cup water (for the sauce)
1 teaspoon Worcestershire sauce
2 teaspoons of brown sugar

Instructions

Preheat your oven to 350°F (175°C). Prepare a baking dish large enough for all the meatballs.
In a large bowl, mix ground beef, rice, 1/2 cup water, onion, salt, garlic powder, and black pepper. Mix gently to avoid overworking the meat.
Form the mixture into 1 1/2 inch meatballs and arrange them in the baking dish without crowding.
In another bowl, whisk together tomato sauce, 1 cup water, Worcestershire sauce, and brown sugar.
Pour this sauce over the meatballs, coating them evenly.
Cover with aluminum foil and bake for 45 minutes. Remove the foil and continue baking for another 15 minutes until the tops are slightly browned.
