Description

Coconut Lavender Lemonade is a refreshing and creamy twist on traditional lemonade, perfect for warm summer days. The combination of rich coconut milk, tangy lemon juice, and fragrant lavender creates a unique and indulgent drink that both soothes and invigorates. The lavender simple syrup adds a floral sweetness that complements the tartness of the lemonade, while the coconut milk makes it luxuriously smooth.

For the lemonade:
1 can Thai Coconut Milk
1 can frozen lemonade concentrate, thawed
2 lemons, freshly squeezed
2 cups water
2 drops purple food coloring (optional)
For the Lavender Simple Syrup:
2 teaspoons dried lavender
1 cup water
1 cup sugar


Instructions

For the Lavender Simple Syrup: In a saucepan, combine the water, sugar, and dried lavender. Cook over medium-high heat, stirring occasionally, until the sugar has completely dissolved. If you prefer a stronger lavender flavor, feel free to add more dried lavender.
Once the sugar has dissolved, remove the syrup from the heat and let it cool completely.
While the syrup is cooling, prepare the lemonade mixture. In a large gallon jar or jug, combine the coconut milk, lemonade concentrate, freshly squeezed lemon juice, and water. Stir until well combined.
Once the lavender syrup has cooled, strain it to remove the lavender flowers. Add the syrup to the lemonade mixture and stir well.
Add in 2 drops of purple food coloring for a beautiful lavender hue (optional).
Taste the lemonade. If it’s too sour, adjust by adding more water or sugar as needed. Stir well before each serving to ensure all ingredients are fully combined.
