Ingredients
2 tbsp extra-virgin olive oil or coconut oil
1 tbsp minced garlic
1 tbsp minced ginger
4 curry leaves
1 tsp turmeric
2 green chilies, chopped
2 tomatoes, chopped
1 dried red chili, chopped
¼ cup tomato puree
Salt, QB
1 1/2 lb prawns, peeled and deveined
1 cup coconut milk
2 tbsp fresh chopped coriander
Instructions
Heat oil in a pan. Add garlic, ginger, and curry leaves and cook until fragrant, about 1-2 minutes.
Add green chilies, turmeric, chopped tomatoes, and dried red chili and cook for another 1-2 minutes.
Add tomato puree and salt, and cook for 1-2 minutes.
Stir in the coconut milk.
Add the prawns and cook until they turn pink, about 3-4 minutes.
Remove from heat and stir in fresh chopped coriander.
Serve immediately with rice or on its own.
