Ingredients
1 tablespoon olive oil 🫒
2 tablespoons butter 🧈
1 pound cod 🐟
Salt and pepper to taste 🧂
1 pound cherry tomatoes, sliced in half 🍅
3 cloves garlic, chopped 🧄
1 pinch red pepper flakes 🌶️
3 green onions, sliced and divided (whites and greens) 🧅
1/2 cup chicken broth 🍗
2 tablespoons lemon juice 🍋
1 tablespoon butter 🧈
Salt and pepper to taste 🧂
1 tablespoon parsley, chopped 🌿
1 tablespoon basil, chopped 🌿
Instructions
1️⃣ Heat the olive oil and melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the cod, seasoned with salt and pepper to taste, and cook until lightly golden brown and cooked through, about 2-3 minutes per side. Then, set the cod aside. 🐟🧂
2️⃣ Add the cherry tomatoes to the butter and oil in the pan and cook until blistered, about 3-5 minutes. 🍅🔥
3️⃣ Reduce the heat to medium. Add the garlic, the whites of the green onions, and the red pepper flakes, and cook until fragrant, about a minute. 🧄🌶️
4️⃣ Add the chicken broth, bring to a simmer, and cook for 3 minutes. Then, add the lemon juice and 1 tablespoon of butter, seasoning with salt and pepper to taste. 🍗🍋🧈🧂
5️⃣ Return the cod to the pan and add the greens of the green onions, parsley, and basil. Stir gently and enjoy! 🐟🧅🌿
