These Coffee Truffles are a delightful fusion of rich coffee flavor and creamy texture, making them the perfect treat for any coffee enthusiast. The smooth blend of cream cheese or coconut butter with a hint of instant coffee creates a luxurious center, while the optional chocolate coating adds a satisfying crunch.
Ingredients
4 oz cream cheese or coconut butter
2 tablespoons butter, or additional coconut butter
3 tablespoons powdered sugar or erythritol
1/2 teaspoon instant coffee
3 oz chocolate chips or broken-up chocolate (optional)
Instructions
Ensure the cream cheese or coconut butter and butter are at room temperature and soft. Combine all ingredients in a bowl and mix until smooth. Using a hand mixer will yield the smoothest texture, though stirring with a fork will also work and still tastes delicious.
Spread the mixture into a container or freeze for a few minutes until firm enough to use a mini cookie scoop. Scoop the mixture into balls and place them onto a parchment-lined plate. Freeze until firm.
If using a container, cut the mixture into bars or squares once firm.
If desired, dip the truffles in melted chocolate. For a smoother chocolate coating, stir in half a teaspoon of oil after melting the chocolate, though this step is optional.
To create bite-sized truffles like the ones shown in the photos, cut them in half as soon as the chocolate coating has set.
Store the truffles in the refrigerator or freezer to keep them fresh. Enjoy chilled!
