Colombian Chicken Ajiaco

Ingredients

4 chicken breasts
3 different types of potatoes, sliced (6 cups total)
1/4 cup guascas (dried herb)
2 corn cobs, cut into pieces
2 garlic cloves, minced
1 large onion, chopped
8 cups chicken broth
1 cup heavy cream
1/2 cup capers
Salt and pepper to taste
Avocado and cilantro for garnish


Instructions

In a large pot, combine chicken breasts, potatoes, corn, garlic, onion, and chicken broth. Bring to a boil.
Reduce heat and simmer for about 30 minutes, or until the chicken is cooked through and the potatoes are tender.
Remove the chicken, shred it, and return to the pot.
Add guascas and continue to simmer for another 10 minutes.
Stir in heavy cream and capers, and season with salt and pepper.
Serve hot, garnished with avocado slices and cilantro.
