  • 2 teaspoons cornstarch
  • 1/3 cup granulated sugar

  • 1/2 cup whipping cream
  • Blue gel food coloring
  • 1 teaspoon vanilla extract (for the filling)
  • 3 eggs
  • 15 regular Oreo cookies, crushed
  • 3/4 cup semisweet chocolate chips (for ganache)
  • 1/2 cup heavy whipping cream (for ganache)
  • Pinch of salt (for the ganache)

Instructions

  1. Preparing the Base Melt the butter in a saucepan over medium heat, stirring in the salt and brown sugar until well combined. Off the heat, whisk in the egg and vanilla extract, then fold in the flour until just mixed. Mix in the chocolate chips, then spread the batter in a prepared pan. Bake at 350°F (175°C) for 15-20 minutes, and let it cool.
  2. Making the Cheesecake Filling Cream the cheese until smooth; incorporate cornstarch, sugar, and a pinch of salt. Gradually add whipping cream, blue food coloring, and vanilla. Mix in eggs one at a time, then fold in crushed Oreos. Pour this over the cooled base and set in a water bath to bake at 300°F (150°C) for 45-55 minutes.
  3. Ganache Topping For the ganache, microwave chocolate chips, heavy cream, and a pinch of salt in 30-second bursts, stirring until smooth. Spread over the cooled cheesecake.
