2 plain bagels (alternatives: everything, onion, or cheese bagels)
1/2 pound shaved steak
4 eggs, beaten
2 slices American cheese (alternatives: cheddar or provolone)
1 small onion, sliced
3 tablespoons unsalted butter
1/2 teaspoon salt
1 teaspoon Montreal steak seasoning
1 tablespoon Worcestershire sauce
Sauce Ingredients:
1/2 cup mayonnaise
2 tablespoons mustard
1/4 teaspoon dried dill


Instructions

Prepare the Sauce:
Mix mayonnaise, mustard, and dill in a small bowl. Refrigerate until needed.
Cook Onions:
Melt 1 tablespoon of butter in a skillet over medium heat. Add sliced onions and a pinch of salt. Cook until slightly browned, then remove and set aside.
Cook Steak:
In a bowl, combine shaved steak with Worcestershire sauce and Montreal steak seasoning.
Heat another tablespoon of butter in the skillet. Cook steak until just browned. Return onions to the skillet, mix, and form into two piles. Top each pile with a slice of cheese to melt.
Scramble Eggs:
In the same skillet, add the last tablespoon of butter. Scramble the eggs, dividing them into two portions for the sandwiches.
Assemble the Bagels:
Toast the bagels on a skillet or toaster.
Spread the prepared sauce on each bagel half.
