  • 15 oz. can whole kernel corn, drained or 1 1/2 cups frozen corn, thawed
  • 34 oz. creamed corn (two 17-oz. cans)
  • 5 large eggs, lightly beaten, or 1 1/4 cups liquid egg substitute
  • 1/2 cup sugar
  • 4 tablespoons cornstarch
  • 1 1/2 teaspoons seasoning salt
  • 1/2 teaspoon dry mustard
  • 1 teaspoon dried minced onion
  • 1/2 cup milk (skim, 1%, or 2% work fine)
  • 1/2 cup melted butter, margarine, or vegetable oil spread

Instructions

  1. Preparing the Oven and Dish: Preheat the oven to 400°F (204°C) and spray a 3 qt. casserole dish, a 9×13 inch glass baking dish, or a disposable aluminum pan with cooking spray or oil.
  2. Mixing the Ingredients: Combine both types of corn with the eggs in a large bowl. In a separate small bowl, mix sugar, cornstarch, seasoned salt, dry mustard, and dried minced onion. Add the dry mixture to the corn mixture and stir thoroughly.
  3. Adding Liquids and Fat: Gradually stir in the milk and melted butter, ensuring a smooth mixture.
  4. Baking the Casserole: Pour the mixture into the prepared baking dish and bake for about 1 hour at 400°F (204°C). Stir halfway through baking. The casserole is done when set and lightly browned on top but still soft in texture.
