Description

Cottage Cheese and Avocado Toast is a delightful and nutritious way to start your day or enjoy a light meal. The creamy texture of cottage cheese blends beautifully with the rich, buttery avocado, creating a satisfying spread that’s both flavorful and filling. Topped with a sprinkle of red pepper flakes and garnished with fresh microgreens, this toast offers a balanced combination of protein, healthy fats, and vibrant flavors.


Ingredients

3 slices bread (sourdough, rye, wholegrain, etc.)
⅔ cup + 1 tbsp (180 g) full-fat cottage cheese
4.94 ounces (180 g) avocado flesh (approximately 1 large avocado)
2 tablespoons chives, finely chopped
¼ teaspoon fine sea salt, plus pepper to taste
⅓ teaspoon red pepper flakes
Microgreens/alfalfa for garnish
2 teaspoons butter or extra virgin olive oil (optional)


Instructions

Mash the Avocado:
Place the avocado flesh in a shallow bowl and mash roughly using a fork. The mixture should be chunky, not perfectly smooth.
Combine with Cottage Cheese:
Add the cottage cheese, finely chopped chives, salt, and pepper to the mashed avocado. Stir gently until well combined. Taste the mixture and adjust seasoning if needed. Set aside.
Toast the Bread:
Butter the bread thinly, including the edges, or drizzle with a little olive oil. Toast in a non-stick pan over medium heat for a few minutes until lightly browned on the buttered side.
Turn the slices over and toast for 1-2 more minutes until the bread is golden and crispy. Remove from heat and allow to cool slightly.
Alternatively, you can toast the bread in a toaster (buttering or oiling is optional).
Assemble the Toast:
Divide the cottage cheese and avocado mixture evenly between the 3 slices of toasted bread.
Sprinkle red pepper flakes over the top and garnish with microgreens or alfalfa.
Serve immediately and enjoy!
