  • 10g vanilla sugar
  • 3 eggs
  • 60g flour
  • 120g poppy seeds
  • 50g sugar
  • 300ml milk
  • 20g butter (82% fat)
  • 5g starch

Instructions

  1. Step 1: Preparing the Poppy Seed Filling In a saucepan, combine poppy seeds, sugar, and milk. Cook over medium heat until the milk nearly evaporates, helping the mixture to thicken and allowing the flavors to blend.
  2. Step 2: Mixing the Cream Filling After the reduction of the milk, add butter and starch to the poppy seeds. Stir the mixture well until it achieves a consistent thickness and smooth texture.
  3. Step 3: Preparing the Cottage Cheese Mixture Pass the cottage cheese through a fine sieve into a large mixing bowl to ensure a smooth base. Add sugar, vanilla sugar, eggs, and flour to the sieved cottage cheese and stir until you achieve a homogeneous and creamy texture.
  4. Step 4: Assembling the Dish Line a suitable baking form with parchment paper. Pour two-thirds of the cottage cheese mixture into the form, spreading evenly. Create a well in the center and pour in the poppy seed filling, then gently cover it with the remaining cottage cheese mixture.
