8 oz dry pasta (shells or macaroni)
1 cup cottage cheese (whole milk)
1 cup sharp cheddar cheese, shredded
1/2 cup milk
1 1/2 teaspoons kosher salt (plus more for seasoning)
1/2 teaspoon garlic powder
1/2 cup pasta cooking water (reserved)


Instructions

Boil the pasta in salted water until al dente, saving 1/2 cup of the pasta water before draining.
Return the cooked pasta to the pot. Over low heat, mix in the milk, cottage cheese, cheddar cheese, and garlic powder. Stir until the cheese is fully melted and the sauce becomes creamy.
Gradually add the reserved pasta water to achieve a smoother sauce consistency.
Season with additional salt and other spices such as paprika, black pepper, or onion powder if desired. For a creamier texture, add more pasta cooking water or milk as needed.
Serve immediately while hot.
