For the Crab Crepes:
1 Tbsp unsalted butter
1 Tbsp finely chopped onion
1 small clove garlic, minced
1 tsp Dijon mustard
¼ tsp prepared horseradish
1 Tbsp fresh lemon juice
3 Tbsp mayonnaise
1/3 cup plain panko breadcrumbs
2 oz shredded sharp white cheddar cheese
2 tsp chopped fresh flat-leaf parsley
2 tsp chopped chives
½ tsp Old Bay seafood seasoning
Pinch kosher salt
Pinch fresh cracked pepper
8 oz lump crab
12 prepared crepes
For Lemon Cheese Sauce:
2 Tbsp unsalted butter
2 Tbsp all-purpose flour
1 ½ cup milk
½ tsp kosher salt
4 oz shredded sharp white cheddar cheese
2 tsp fresh lemon juice


Instructions

For the Crab Crepes:
Preheat oven to 400°F (200°C).
In a skillet, melt butter over high heat. Add onion and garlic; cook until translucent and fragrant.
Transfer to a bowl, then mix in mustard, horseradish, lemon juice, mayonnaise, breadcrumbs, cheese, parsley, chives, Old Bay, salt, and pepper.
Gently fold in crab meat. Spoon mixture into crepes, roll them up, and place in a baking dish.
Bake for 15 minutes or until crispy on the edges.
For Lemon Cheese Sauce:
Melt butter in a saucepan. Stir in flour and cook for 2 minutes.
Gradually add milk, stirring until thickened.
Remove from heat; add salt, cheese, and lemon juice. Stir until smooth.
Serve sauce over baked crepes.
