Ingredients
Scale
- 1 cup fresh or frozen cranberries
- 1/2 cup granulated sugar
- 1/4 cup orange juice
- 1/2 teaspoon cinnamon (optional)
- 1/4 teaspoon salt
- 1 sheet puff pastry, thawed
- 4 ounces Brie cheese, cut into small cubes (rind removed)
- 1 tablespoon fresh thyme leaves (optional)
- 1 egg (for egg wash)
Instructions
- Prepare the Cranberry Sauce: In a small saucepan, combine the cranberries, sugar, orange juice, cinnamon if using, and salt. Bring the mixture to a simmer over medium heat, stirring occasionally, and let it cook for about 10 minutes. The sauce is ready once the cranberries have burst and the sauce has slightly thickened. Remove from the heat and allow to cool.
- Assemble the Bites: Start by preheating your oven to 375°F (190°C) and lining a baking sheet with parchment paper. On a lightly floured surface, roll out the puff pastry sheet. Use a round cookie cutter or the rim of a glass to cut out 3-inch diameter circles. Place a small cube of Brie cheese in the center of each pastry circle, followed by a teaspoon of the cooled cranberry sauce. Optionally, you can sprinkle some fresh thyme leaves over the cranberry sauce for added flavor. Beat the egg lightly and brush the edges of each pastry circle with the egg wash. This will help in achieving a golden, crispy finish. Arrange the pastry circles on the baking sheet and bake for 15-20 minutes until the pastry is golden and crispy, and the cheese has melted. Allow to cool slightly before serving.
- Servings & Preparation Time: This recipe makes about 12-15 pastry bites. Total preparation and cooking time is approximately 40 minutes.
- Tips for Storage & Reheating: Storage: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheating: To reheat, place the bites on a baking sheet and warm in an oven preheated to 350°F (175°C) for about 5-7 minutes or until heated through and crisp. Freezing: You can freeze the unbaked pastry bites on a baking sheet and then transfer them to a freezer-safe bag. Bake from frozen, adding a few extra minutes to the original baking time.
