1/2 cup brown sugar

1 egg
1/4 cup vegetable oil

1 1/2 cups all-purpose flour

1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1 1/2 cups chopped apples (chopped small)
Cream Cheese Layer Ingredients:
8 oz. softened cream cheese
1 teaspoon vanilla extract
3 tablespoons white sugar
Streusel Ingredients:
3/4 cup white sugar
1/4 cup brown sugar
1/2 cup flour
1 teaspoon cinnamon
1/2 teaspoon baking powder
1/8 teaspoon salt
6 tablespoons cold butter


Instructions

Preheat your oven to 350ºF (175ºC) and grease an 8×8 inch square pan.
In a mixing bowl, combine softened butter, brown sugar, and white sugar for the cake. Beat until fluffy. Add the egg, vegetable oil, and vanilla extract. Mix until fully combined.
In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Gradually stir this into the butter mixture until just combined. Fold in the chopped apples. Spread the batter evenly into the prepared pan.
In another bowl, mix together the softened cream cheese, sugar, and vanilla for the cream cheese layer. Spread this evenly over the cake batter in the pan.
For the streusel topping, combine the white sugar, brown sugar, flour, cinnamon, baking powder, and salt. Cut in the cold butter using your hands or a pastry blender until the mixture is crumbly. Sprinkle the streusel evenly over the cream cheese layer.
Bake the cake for about 45 minutes, or until the streusel topping is golden brown and the cake is set in the center.
Allow to cool before serving. The cake can be stored in the refrigerator.
