Ingredients

12 oz Italian sausage, casings removed
1 tablespoon olive oil
10 oz potato gnocchi
1 cup heavy cream
½ cup chicken broth
1 cup butternut squash puree
3 cloves garlic, minced
2 tablespoons fresh sage, chopped
2 tablespoons fresh thyme
Salt and coarsely ground black pepper to taste


Instructions

Remove sausage from casings and slice. Heat olive oil in a large skillet over medium heat.
Add sausage to skillet and cook until browned on one side, about 4 minutes. Flip and cook an additional 2 minutes.
Add gnocchi, heavy cream, and chicken broth to the skillet. Bring to a boil, then cover and reduce to medium heat. Cook for 5 minutes.
Add butternut squash puree and minced garlic. Boil, then reduce heat and simmer for 3 more minutes, stirring occasionally, until sauce thickens.
Stir in half the sage and thyme, season with salt and pepper. Adjust salt as needed based on the sausage’s saltiness.
Serve topped with remaining sage and thyme.
