12 oz Italian sausage, casings removed
1 tablespoon olive oil
1 cup heavy cream
½ cup chicken broth
1 cup butternut squash puree
3 cloves garlic, minced
10 oz orzo, uncooked
2 tablespoons fresh sage, chopped
2 tablespoons fresh thyme
Salt and coarsely ground black pepper, to taste


Instructions

Cook sausage: Remove the sausage from casings and slice. Heat olive oil in a large, high-sided skillet over medium heat. Add sausage slices and cook for about 4 minutes on one side without turning, until browned. Flip and cook for an additional 2 minutes.
Make creamy butternut squash sauce: To the same skillet, add heavy cream, chicken broth, butternut squash puree, and minced garlic. Bring to a boil over medium heat, then reduce to low-medium and cook for 5 minutes or until the sauce thickens. Adjust cooking time for desired sauce thickness.
Cook orzo: In a separate pot, bring water to boil and cook orzo according to package instructions until al dente, about 7 minutes. Drain and set aside.
Assembly: Combine cooked orzo with the sauce in the skillet. Stir in half of the sage and thyme. Cook over medium-high heat for 2 minutes. Season with salt and black pepper. Garnish with remaining herbs before serving.
