  • 1/4 tsp chili powder

  1. Step 1: Prepare Roux Add the butter and flour to a small sauce pot. Heat and whisk the butter and flour together until they form a bubbly and foamy texture. Continue to cook and whisk for about 60 seconds.
  2. Step 2: Incorporate Milk Gradually whisk the milk into the flour and butter mixture. Increase the heat slightly, allowing the milk to come to a simmer while continuously whisking. Once it simmers, observe the mixture as it thickens. When it’s sufficiently thick to coat a spoon, remove from the heat.
  3. Step 3: Melt Cheese Add the shredded cheddar gradually, stirring one handful at a time until the cheese is fully melted into the sauce. If necessary, keep the pot over a low flame to aid the melting process without overheating, which can lead to separation.
