- 2 Tbsp flour
- 1 cup whole milk
- 6 oz. medium cheddar, shredded (about 1.5 cups)
- 1/4 tsp salt
- 1/4 tsp chili powder

- Step 1: Prepare Roux Add the butter and flour to a small sauce pot. Heat and whisk the butter and flour together until they form a bubbly and foamy texture. Continue to cook and whisk for about 60 seconds.
- Step 2: Incorporate Milk Gradually whisk the milk into the flour and butter mixture. Increase the heat slightly, allowing the milk to come to a simmer while continuously whisking. Once it simmers, observe the mixture as it thickens. When it’s sufficiently thick to coat a spoon, remove from the heat.
