Description

2 ½ pounds red potatoes
1 onion
3 tablespoons butter
3 tablespoons flour
1 teaspoon dry mustard powder
2 cups milk
1 cup cheddar cheese, shredded
½ cup gruyere cheese, shredded
Salt & pepper to taste


Instructions

Preheat the oven to 400°F (200°C).
Thoroughly wash the potatoes and slice them into ⅛ inch thin slices. Also, slice the onion as thin as possible.
Layer the potatoes and onions in small stacks and place them upright in a greased 2.5 to 3-quart casserole dish.
In a saucepan, melt the butter and whisk in the flour. Cook for 2-3 minutes until golden.
Add the dry mustard, milk, salt, and pepper. Continue to whisk over medium heat until the mixture is thick and bubbly.

Remove from heat and stir in the shredded cheddar and gruyere cheeses until melted.
Pour the cheese sauce over the layered potatoes. Cover the dish with foil (lightly sprayed with cooking spray) and bake for 60 minutes.
Remove the foil and continue to bake for an additional 20-30 minutes, or until the top is lightly browned and the potatoes are tender.
Let it cool for 15 minutes before serving.
