  • 1 onion, finely chopped
  • 2 carrots, peeled and roughly chopped
  • 2 celery sticks, roughly chopped
  • 4 cloves garlic, crushed
  • 1 Tbsp butter
  • 2 Tbsp flour
  • 750ml chicken stock
  • 1kg boneless chicken fillets, diced
  • 1 cup frozen peas, thawed
  • 1 cup cream
  • 3 Tbsp cornflour
  • Mashed potato
  • Italian parsley, chopped

Instructions

  1. Step 1: Preheat the Oven Start by preheating your oven to 180°C fan bake to ensure it’s ready for baking your casserole.
  2. Step 2: Sauté Vegetables Heat a large cast-iron casserole dish on medium heat. Add olive oil followed by the onion, carrot, and celery. Sauté for around five minutes, or until the onions begin to soften.
  3. Step 3: Add Garlic and Butter Stir in the crushed garlic. Then, make a gap in the center of your dish and add the butter, allowing it to melt and bubble before proceeding.
  4. Step 4: Incorporate Flour Once the butter has started bubbling, sprinkle the flour over it, stirring well to combine everything into a smooth mixture. Cook this for two minutes.
  5. Step 5: Add Chicken Stock and Chicken Pour in half of the chicken stock to deglaze the dish, scraping any bits off the bottom with a wooden spoon. Add the remaining stock and the diced chicken fillets.
  6. Step 6: Bake the Casserole Cover the dish with its lid and transfer it to the oven. Bake for 45 minutes.
  7. Step 7: Add Peas and Cream After baking, remove the dish from the oven and stir in the peas and cream.
  8. Step 8: Thicken with Cornflour Mix the cornflour with three tablespoons of cold water, then stir this mixture into your casserole to help thicken the sauce.
  9. Step 9: Final Baking Return the casserole to the oven, uncovered, and bake for an additional 15 minutes or until the casserole has thickened sufficiently.
