- 8 ounces angel hair pasta (half of a 16 ounce box)
- 2 cups chopped, cooked chicken
- 2 (10 ounce) cans cream of chicken soup
- 1 cup salsa
- ½ cup sour cream
- 1 cup Mexican cheese blend, divided use
- 1 Tablespoon taco seasoning
- 1 cup Mexican cheese blend
- Dried parsley, for topping (optional)
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with nonstick cooking spray to prevent sticking.
- Cook 8 ounces of angel hair pasta as per the package instructions until al dente. Once cooked, drain the pasta well.
- Return the drained pasta to the pot. Add in the chopped, cooked chicken, cream of chicken soup, salsa, sour cream, half of the Mexican cheese blend, and taco seasoning. Stir all the ingredients together until evenly mixed.
- Transfer the pasta mixture into the prepared baking dish. Spread the mixture evenly and top with the remaining cup of Mexican cheese blend. If desired, sprinkle some dried parsley on top for added color and flavor.
- Cover the dish with nonstick aluminum foil and bake in the preheated oven for about 25 minutes, or until the bake is hot and bubbly throughout.
