Ingredients
1 cup thick coconut cream
1 – 1 1/4 tsp organic gelatin
2 Tbsp water
Stevia or preferred sweetener to taste
1 – 1 1/2 tsp organic matcha powder
1/2 – 1 tsp vanilla extract
Optional Add-Ins:
Food-grade peppermint, basil, lemon, or lime essential oil (to taste)
1/2 – 1 tsp spirulina powder (for added color and nutrients)
Instructions
In a small saucepan, combine the gelatin, water, and matcha powder to create a smooth paste. Let it sit for 1-2 minutes, allowing the gelatin to bloom and thicken.
Once the gelatin has bloomed, add the coconut cream, sweetener, and vanilla (along with any optional add-ins) to the saucepan. Heat over low to medium heat, stirring constantly until the gelatin fully dissolves—this should take 1-2 minutes. Make sure all the ingredients are well combined and smooth.
Taste the mixture and adjust the sweetness or flavoring to your liking.
Pour the mixture into a glass jar, mug, or individual serving dishes, then place them in the refrigerator to set.
Let the panna cotta chill for 2.5-3.5 hours until firm.
