2 (15-ounce) cans corn kernels
2 cups unsweetened oat milk or whole milk
2 tablespoons unsalted butter
1/2 teaspoon kosher salt, plus more as needed
Freshly ground black pepper
Finely chopped fresh chives, for garnish (optional)


Instructions

Drain and rinse the corn kernels. In a medium saucepan, cook the corn over medium heat, stirring occasionally, until dry and slightly browned, about 8 minutes.
Reserve 1/2 cup of the corn for later use. Transfer the rest into a blender, add the milk, and blend until smooth.
In the same saucepan, melt the butter over medium-high heat, then add the reserved corn and cook until it starts to pop, about 1 minute.
Pour the blended mixture back into the pan, season with salt, and simmer until thickened, 2-3 minutes.
Taste and adjust seasoning. Serve hot, garnished with black pepper and chives, if using.
