Description

The Creamy Corn Delight Casserole is a wonderfully rich and cheesy dish that promises to be the highlight of any meal. Combining the sweetness of corn with the creamy texture of cheeses and a hint of spice from hatch green chiles, this casserole serves as a perfect side dish or a comforting main course. Its ease of preparation makes it ideal for both weeknight dinners and special occasions.

Ingredients

Scale
  • 4 ounces cream cheese
  • 2 tablespoons butter
  • 2 tablespoons milk (or almond milk for a vegan variant)
  • 3 cups corn, fresh, frozen, or canned
  • ½ cup cheddar cheese, shredded
  • 1 cup parmesan cheese, divided and shredded
  • 2 ounces hatch green chiles, diced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Fresh chives, thinly sliced (for garnish)

Instructions

  1. Preparing the Oven and Baking Dish Start by preheating your oven to 350℉ (177℃). Grease an 8×8 inch baking dish with butter to prevent sticking.
  2. Mixing the Base In a large saucepan, combine the cream cheese, butter, and milk. Heat the mixture over medium heat, stirring continuously until all the ingredients are melted and smooth.
  3. Adding the Flavor Remove the saucepan from heat. Stir in the corn, cheddar cheese, ½ cup of the parmesan cheese, green chiles, salt, and pepper, mixing well until all components are evenly distributed.
  4. Assembling the Casserole Transfer the corn mixture into the greased baking dish. Spread it evenly and top with the remaining ½ cup of parmesan cheese.
  5. Baking Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Afterwards, remove the foil and bake for an additional 10 minutes to allow the cheese on top to brown and become crispy.
  6. Finishing Touches Once cooked, remove the casserole from the oven, and sprinkle thinly sliced chives on top for garnish. Serve hot and enjoy the creamy texture complemented by the melty cheeses and vibrant chives.
