Ingredients
4 tbsp vegan butter, separated
2 cups orzo
3 cups vegetable stock or bouillon & water
1/2 cup onion, diced
3 garlic cloves, minced
1/2 cup nutritional yeast
3/4 cup rice milk, plain, unsweetened
1 tsp salt
1/4 tsp black pepper
1/2 tsp dried parsley
2 tsp lime juice
Instructions
Melt 2 tbsp vegan butter in a large skillet over low-medium heat. Sauté onions, garlic, and orzo until the orzo is lightly browned, about 5 minutes.
Slowly add vegetable stock and bring to a boil. Reduce to a simmer and cook for 13 minutes, or until orzo is fully cooked, stirring occasionally.
Stir in the remaining 2 tbsp butter, rice milk, and nutritional yeast. Bring to a boil again while stirring.
Lower heat, add salt, pepper, parsley, and lime juice. Simmer for another minute. Serve warm.
