Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef or Italian sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 1 (14.5 oz) can diced tomatoes
  • 8 lasagna noodles, broken into pieces
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley or basil for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the ground beef or sausage and cook until fully browned, breaking it apart with a spoon as it cooks. Drain any excess fat if necessary.
  2. Add the diced onion and sauté for 4-5 minutes until it begins to soften. Incorporate the minced garlic and continue to cook for another minute until the aroma is vivid and inviting.
  3. Pour in the chicken broth, Alfredo sauce, and diced tomatoes into the pot. Season the mixture with dried basil, oregano, salt, and pepper. Bring it to a boil, then lower the heat and let it simmer for about 10 minutes.
  4. Introduce the broken lasagna noodles to the simmering broth and cook for another 10-12 minutes, or until the noodles are tender.
  5. Fold in the shredded mozzarella and grated Parmesan cheese until they melt smoothly into the soup, creating a rich, creamy texture.
