Ingredients
1 (.3 oz) box Sugar-Free Jello, any flavor*
¾ cup boiling water
1 cup ice water
1 cup heavy whipping cream
1 tablespoon Swerve Confectioners
Instructions
In a medium-size bowl, stir Jello powder into boiling water and keep stirring until completely dissolved.
Fill a 1-cup measure with ice and then add water to make 1 cup of ice water. (If using GramZero brand Jello, just use the same amount of cold water instead of ice water.)
Stir the ice water into the Jello mixture, stirring until it cools and the ice cubes are mostly melted. Remove any unmelted ice cubes. The Jello will start to soft set as you prepare the next step.
In a large bowl, use an electric mixer to whip together the sweetener and heavy whipping cream until stiff peaks form.
Gradually whip the soft set Jello into the whipped cream until fully combined and smooth.
Pour the Jello whip mixture into 4 custard cups or a medium-sized bowl. Refrigerate for 2 hours until set and creamy.
