1 small shallot
2 cloves garlic
1 large lemon
1/4 small bunch fresh dill
4 (6-ounce) skinless or skin-on salmon fillets
1 1/2 teaspoons kosher salt, divided
1/2 teaspoon freshly ground black pepper, divided
1 tablespoon olive oil
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup half-and-half
1/2 cup low-sodium chicken or vegetable broth


Instructions

Prepare the vegetables and lemon: Finely chop the shallot, mince the garlic cloves, grate the lemon zest, and chop the dill.
Season the salmon fillets with salt and pepper and sear in olive oil over medium-high heat, flipping once, until desired doneness.
In the same pan, sauté shallot and garlic in butter, then stir in flour, followed by half-and-half and broth to make a creamy sauce.
Stir in lemon zest, lemon juice, and dill, return salmon to pan, and simmer briefly.
