- 1 tsp. chili powder
- Freshly ground black pepper, to taste
- 1 Tbsp. olive oil
- 8 oz. mushrooms, sliced
- 3 cloves garlic, minced
- 1 can (10.5 oz) reduced-sodium cream of mushroom soup
- 1 cup water
- 1/2 Tbsp. cornstarch (optional, for thicker sauce)
- 1/2–1 Tbsp. water (optional, mix with cornstarch)
Instructions
- Prepare the Chicken Slice the chicken fillets in half to butterfly them. Pound the cutlets to about ½ inch thickness using a meat pounder, then season both sides with salt, chili powder, and freshly ground black pepper.
- Cook the Chicken Heat olive oil in a large skillet over medium heat. Cook the seasoned chicken on each side for about 4-5 minutes, then transfer to a plate and set aside.
