  • 1.5 tsp. salt
  • 1 tsp. chili powder
  • Freshly ground black pepper, to taste
  • 1 Tbsp. olive oil
  • 8 oz. mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 can (10.5 oz) reduced-sodium cream of mushroom soup
  • 1 cup water
  • 1/2 Tbsp. cornstarch (optional, for thicker sauce)
  • 1/21 Tbsp. water (optional, mix with cornstarch)

Instructions

  1. Prepare the Chicken Slice the chicken fillets in half to butterfly them. Pound the cutlets to about ½ inch thickness using a meat pounder, then season both sides with salt, chili powder, and freshly ground black pepper.
  2. Cook the Chicken Heat olive oil in a large skillet over medium heat. Cook the seasoned chicken on each side for about 4-5 minutes, then transfer to a plate and set aside.
  3. Sauté the Vegetables In the same pan, add the sliced mushrooms and minced garlic, cooking for a few minutes until the mushrooms are browned.
  4. Prepare the Sauce Add the cream of mushroom soup to the skillet and fill the can with one cup of water to add as well. Whisk the mixture until smooth and bring to a boil.
  5. Simmer with Chicken Return the chicken to the pan, simmering for about 5 minutes or until the chicken reaches an internal temperature of 165 degrees Fahrenheit. If a thicker sauce is desired, mix the cornstarch with water in a separate bowl to form a slurry and add to the sauce, simmering for an additional minute until thickened.
