Ingredients
1 lb pasta such as tagliatelle, fettuccine, or linguine
1 shallot, finely chopped
1 clove garlic, minced
1 tbsp butter
200g/7oz salmon fillet, skin removed and cut into bite-sized pieces
125ml/1/2 cup dry white wine
250ml/1 cup double/heavy cream
80g/2 cups mixed greens (spinach, arugula, watercress)
½ lemon (zest and 1 tbsp juice)
¼ tsp salt, or to taste
1 tbsp fresh parsley, chopped
Instructions
Cook pasta in a large pot of salted boiling water according to package instructions; drain well.
In a large pan, melt butter over medium heat, add salmon pieces, season with salt and pepper, and sear until fully cooked, about 2-3 minutes; remove and set aside.
In the same pan, add olive oil, shallots, and garlic; sauté over low heat until fragrant. Increase heat to medium, add white wine and reduce for 5-7 minutes.
Stir in heavy cream, mixed greens, lemon zest, and juice; season with salt. Let it simmer until greens wilt slightly.
Toss the cooked pasta in the cream sauce, then top with seared salmon and chopped parsley before serving.
