Ingredients
- Pasta: 8 ounces of uncooked bucatini or your pasta of choice.
- Italian Sausage: 1 pound, for that hearty meaty flavor.
- Olive Oil: 1 tablespoon, for sautéing.
- Onion: 1/2 medium, chopped.
- Bell Peppers: 1 medium red and 1 medium yellow, chopped for a burst of color and sweetness.
- Butter: 1 tablespoon, to enrich the sauce.
- Garlic: 2-3 cloves minced, for a fragrant aroma.
- Flour: 1 teaspoon, to help thicken the sauce.
- Heavy/Whipping Cream: 1 cup, for creamy consistency.
- Dijon Mustard: 1/2 teaspoon, to add a tangy depth.
- Baby Spinach: 2 cups, packed, to add freshness and nutrition.
- Seasonings: Salt & pepper, to taste.
- Parmesan Cheese: Freshly grated, optional, for garnishing.
Directions
- Cook Pasta: Start by boiling a large pot of salted water. Cook the pasta al dente according to the package directions.
- Brown the Sausage: While the pasta cooks, heat a skillet over medium-high and brown the sausage, breaking it into crumbles as it cooks, about 8-10 minutes. Once browned, transfer to a paper towel-lined plate to drain.
- Sauté Vegetables: In the same skillet, add the olive oil, followed by the chopped onion and bell peppers. Sauté until the onions are lightly browned and peppers are tender, about 7-8 minutes.
- Make the Sauce: Reduce the heat to medium, add butter and garlic to the skillet. Once the butter has melted, sprinkle flour over the mixture and stir well for about a minute. Pour in the cream and add Dijon mustard, stirring continuously to prevent lumps. Let the sauce thicken for about a minute.
- Combine Ingredients: Add the cooked sausage and fresh spinach to the sauce. Stir until the spinach has wilted. Before draining the pasta, scoop out a splash of pasta water and add it to the skillet to help the sauce cling to the pasta better.
- Finish the Dish: Drain the pasta and toss it in the skillet with the sauce, ensuring each strand is nicely coated. Adjust seasoning with salt and pepper.
- Serve: Plate the pasta while hot. Garnish with freshly grated parmesan cheese if desired.
