Ingredients

8 ounces uncooked pasta (bucatini recommended)
1 pound Italian sausage
1 tablespoon olive oil
1/2 medium onion, chopped
1 medium red bell pepper, chopped
1 medium yellow bell pepper, chopped
1 tablespoon butter
23 cloves garlic, minced
1 teaspoon flour
1 cup heavy/whipping cream
1/2 teaspoon Dijon mustard
2 cups (packed) fresh baby spinach
Salt & pepper, to taste
Freshly grated parmesan cheese (optional, to garnish)


Instructions

Boil a large pot of salted water and cook the pasta al dente according to package directions.
In a skillet over medium-high heat, brown the sausage, breaking it up as you go, about 8-10 minutes. Once cooked, transfer to a paper towel-lined plate.
In the same skillet, add olive oil, onion, and bell peppers. Cook until onions are lightly browned and peppers are softened, about 7-8 minutes.
Reduce heat to medium, add butter and garlic, and once butter is melted, sprinkle in flour and cook for about a minute, stirring well.
Stir in the cream and Dijon mustard, making sure there are no lumps. Allow the sauce to thicken for about a minute.
Add back the sausage and the spinach. Stir until the spinach wilts.
Before draining the pasta, add a splash of pasta water to the skillet, then drain the pasta and add it to the skillet. Toss until pasta is coated with the sauce.
Serve immediately, seasoned with salt and pepper, and garnished with parmesan cheese.
