- 2 tablespoons of olive oil
- 1 pound of uncooked shrimp, peeled and deveined
- 8 oz of lump crab meat
- 3 cloves of garlic, minced
- 1 14 oz can of low sodium chicken broth
- 1 1/4 cup of heavy cream (not whipping cream)
- 8 oz of uncooked fettuccine pasta noodles
- 3 oz of freshly shredded real parmesan cheese
- Salt and pepper to taste
- Flat leaf parsley for garnish
Instructions
- Step 1: Sauté the Shrimp Heat the olive oil over medium-high heat. Season the shrimp with ½ teaspoon of kosher salt and some freshly ground pepper. Sauté just until they start to turn pink, about 3-5 minutes. Add the minced garlic and continue to cook for another minute. Remove the shrimp from the pan and set aside.
- Step 2: Cook the Pasta Add the chicken broth, heavy cream, and uncooked fettuccine to the pan. Stir well, bring to a boil, then cover and reduce to a simmer. Let it simmer for 15-20 minutes or until the pasta is tender.
- Step 3: Combine Ingredients Remove the pan from heat and stir in the freshly shredded parmesan cheese until melted and smoothly incorporated. Add back the sautéed shrimp and lump crab meat, stirring gently to mix throughout the pasta.
- Step 4: Season and Serve Adjust the seasoning with additional salt and pepper if needed. Garnish with freshly chopped flat leaf parsley before serving. Note that the Alfredo sauce will continue to thicken upon cooling.
