Ingredients

For the Pasta:

  • 16 oz medium shells pasta

For the Shrimp and Vegetables:

  • 2 tbsp olive oil (divided)
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 small onion, sliced
  • 1 lb shrimp, peeled and deveined
  • 1 package fajita seasoning mix (divided)
  • 1/2 tsp each of salt, pepper, onion powder, garlic powder, paprika, chili powder, and cumin (optional if not using fajita seasoning mix)

For the Sauce:

  • 1 can (14 oz) diced fire-roasted tomatoes
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • Chopped cilantro for garnish (optional)

Instructions

1️⃣ Cook the Pasta:

Cook pasta according to package instructions until al dente. Rinse under cold water and drain. Set aside in a large bowl.

2️⃣ Prepare the Vegetables:

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the bell peppers and onion, sautéing until they are tender and slightly caramelized, about 5-7 minutes. Remove from skillet and add to the bowl with the pasta.

3️⃣ Cook the Shrimp:

Using the same skillet, add the remaining tablespoon of olive oil. Add the shrimp and cook for about 2-3 minutes on each side or until they turn pink and are slightly golden. Halfway through, sprinkle with 1 tablespoon of the fajita seasoning mix. Transfer the cooked shrimp to the bowl with the pasta and vegetables.

4️⃣ Make the Sauce:

In the now-empty skillet, combine the diced fire-roasted tomatoes, chicken broth, heavy cream, and cream cheese. Stir and cook over medium heat until the cream cheese is completely melted and the sauce begins to thicken, about 3 minutes. Stir in the remaining fajita seasoning and shredded cheddar cheese until smooth and creamy.

5️⃣ Combine and Serve:

Return the pasta, vegetables, and shrimp to the skillet. Toss everything together to ensure the ingredients are evenly coated with the creamy sauce. Heat through for a couple of minutes to meld the flavors. Garnish with chopped cilantro if using, and serve hot.
