Our Creamy Shrimp Orzo combines the lush flavors of the Mediterranean with the comfort of a home-cooked meal. The artichokes add a unique tang, balancing the creaminess of the sauce, making every bite a harmonious fusion of flavors.

Ingredients

Scale

Shrimp:
1 lb raw shrimp, large, peeled, and deveined (16 or 20 count per 1 pound)
1 teaspoon smoked paprika
½ teaspoon Italian seasoning (thyme, basil, oregano, rosemary)
¼ teaspoon salt
¼ teaspoon black pepper
5 cloves garlic, minced
2 tablespoons olive oil
Orzo and Sauce:
⅓ cup sun-dried tomatoes, chopped
1 cup uncooked orzo
2 cups chicken stock
¼ teaspoon salt
14 oz artichoke hearts, drained and chopped (1 can or about 1 cup)
4 oz fresh spinach
1 cup heavy cream
Salt and pepper to taste

Instructions

Searing the Shrimp:
Season the shrimp with smoked paprika, Italian seasoning, salt, and pepper.
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until hot. Add the shrimp and minced garlic, and cook for about 2 minutes per side. Remove shrimp to a plate.
Cooking the Orzo:
3. In the same skillet, add the sun-dried tomatoes, uncooked orzo, and an additional tablespoon of olive oil. Cook on medium heat, stirring, for about 2 minutes until browned.
4. Add chicken stock and salt, bring to a boil, then reduce to a simmer and cook for about 10 minutes, stirring occasionally, until orzo is cooked through.
5. Stir in spinach, artichokes, and cream, and cook until the spinach wilts.
6. Return the seared shrimp to the skillet and simmer for about 2 minutes, until warmed through. Season with additional salt, pepper, and smoked paprika if desired.
