The Crème Brûlée Cheesecake Bars combine the silky texture of classic cheesecake with the rich, caramelized top layer of a traditional crème brûlée. This dessert not only satisfies your sweet tooth but also offers a delightful crunch with its toffee bits topping, making it a perfect blend of textures and flavors.


Ingredients

CRUST
▢ 17.5 oz pouch sugar cookie mix
▢ 3.5 oz box instant French vanilla pudding mix
▢ ½ cup unsalted butter, melted
▢ 1 large egg
▢ 2 tbsp light brown sugar
▢ 2 tsp vanilla extract
FILLING
▢ 16 oz cream cheese, room temperature and very soft
▢ 1 large egg
▢ 3 large egg yolks (whites discarded or saved for another use)
▢ ½ cup sour cream
▽ ½ cup granulated sugar
▢ 2 tsp vanilla extract
▢ ½ cup toffee bits


Instructions

CRUST:
Preheat oven to 350°F. Line a 9×13-inch pan with aluminum foil for easier cleanup, and spray with cooking spray. In a large bowl, combine all crust ingredients and stir until a thick dough forms. Press into the prepared pan in an even layer.
FILLING:
In the same bowl (cleaned), combine all filling ingredients except the toffee bits. Beat with a handheld electric mixer on high speed until smooth. Spread evenly over the crust. Bake for about 40 to 45 minutes or until the center is set. Sprinkle toffee bits on top and let cool at room temperature for about 30 minutes. Refrigerate for at least 3 hours before serving.
