Ingredients
2 cups shredded cooked chicken (preferably breast or thigh meat)
1 cup shredded cheddar or Mexican blend cheese
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/4 teaspoon smoked paprika
Salt and pepper to taste
12–16 corn tortillas
Cooking spray or oil, for coating
Optional: chopped cilantro, diced onion, lime juice (for added flavor)
Instructions
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone mat.
In a mixing bowl, combine chicken, spices, cheese, and optional ingredients. Mix well.
Warm tortillas in the microwave for about 30 seconds with a damp paper towel.
Spoon 2 tablespoons of mixture onto each tortilla, roll tightly, and place seam-side down on the baking sheet.
