Ingredients
2 1/2 lbs Russet potatoes, peeled and cut into matchsticks
3 tbsp olive oil
1 1/2 tsp salt, divided
1 tsp black pepper, divided
3 tbsp unsalted butter
4 garlic cloves, minced
1/3 cup fresh parsley, chopped
1 cup Parmesan cheese, finely grated
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Place the matchstick potatoes in a large plastic bag. Add the olive oil, 1 tsp of salt, and 1/2 tsp of black pepper. Seal the bag and shake well to coat the fries evenly.
Spread the fries onto the prepared baking sheet in a single layer, making sure they are spaced out to allow for even crisping.
Bake in the preheated oven for 35-45 minutes, flipping the fries halfway through, until they reach your desired level of crispiness.
When the fries are almost done, melt the butter in a skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until the garlic is soft and fragrant.
In a large bowl, combine the baked fries with the garlic butter, Parmesan cheese, fresh parsley, the remaining 1/2 tsp of salt, and 1/2 tsp of black pepper. Toss everything together until the fries are well coated.
Transfer the fries to a serving platter, making sure to include the extra Parmesan, garlic, and parsley left in the bowl. Serve immediately and enjoy!
