2 pounds shrimp, peeled, deveined, tails on or off
2 tablespoons lemon juice, freshly squeezed
1 brown shallot, minced
⅓ cup butter, melted, divided
1 pinch salt, to taste
1 pinch pepper, to taste
⅓ cup Panko breadcrumbs
4 cloves garlic, minced
2 tablespoons Parmesan cheese, grated
½ teaspoon red pepper flakes, crushed (or more to taste)
¼ cup fresh parsley leaves, chopped
3 lemon wedges, to serve


Instructions

Preheat the oven to 425ºF (220°C). In a large skillet or baking dish, combine shrimp, lemon juice, minced shallot, 2 tablespoons melted butter, salt, and pepper. Mix well to coat the shrimp.
(Optional) Arrange shrimp in a single layer from the outer edge of the skillet toward the center.
In a small bowl, mix remaining melted butter, Panko breadcrumbs, garlic, Parmesan cheese, red pepper flakes, and 2 tablespoons parsley.
Sprinkle the breadcrumb mixture over the shrimp and bake for 12 minutes until hot and bubbling, and shrimp are just cooked through.
Set the oven to broil and broil for an additional minute until the top is golden and crispy.
Garnish with remaining parsley, drizzle with lemon juice, and serve with lemon wedges.
