For the zucchini chips:
2 medium zucchini, sliced into 1/8” rounds
1.5 tablespoons olive oil
1/3 cup panko breadcrumbs
1/3 cup grated parmesan cheese
1/4 teaspoon salt
Greek yogurt ranch for dipping (optional)


Instructions

Preheat the oven to 425°F (220°C). Line a large rimmed baking sheet with an ovenproof wire rack and spray generously with cooking spray.
In a medium bowl, toss the zucchini rounds with olive oil, ensuring they are evenly coated.
In a small bowl, combine the panko breadcrumbs, parmesan cheese, and salt.
Dip each zucchini round into the breadcrumb mixture, ensuring both sides are coated.
Arrange the coated zucchini rounds on the prepared wire rack in a single layer.
Bake for 15-20 minutes or until golden brown and crispy.
Serve warm with Greek yogurt ranch dip if desired and enjoy!
