Chicken:

4 large chicken breasts
2 sleeves Ritz crackers
1/4 tsp salt
1/8 tsp pepper
1/2 cup milk
3 cups cheddar cheese, grated
1 tsp dried parsley
Sauce:

1 (10 oz) can cream of chicken soup
2 tbsp sour cream
2 tbsp butter


Instructions

Preheat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
Cut each chicken breast into 3 large chunks.
In a small food processor, grind up the Ritz crackers.
Pour the milk, cheese, and cracker crumbs into 3 separate shallow dishes. Mix the salt and pepper into the cracker crumbs.
Dip each piece of chicken into the milk, then into the cheese, pressing the cheese onto the chicken. Then, coat the cheesy chicken in the cracker crumbs, pressing to adhere.
Place the coated chicken pieces in the prepared baking dish and sprinkle with dried parsley.
Cover the dish with aluminum foil and bake for 35 minutes. Remove the foil and bake for an additional 10 minutes, or until the chicken is golden brown and crispy.
While the chicken is baking, prepare the sauce by combining the cream of chicken soup, sour cream, and butter in a medium saucepan. Heat over medium-high heat, whisking until the sauce is hot and smooth.
Serve the sauce over the baked chicken.
