Ingredients
3 cups corn kernels (thawed if using frozen, drained if canned, or freshly shucked from 3 large ears)
1 jalapeño, seeds removed and finely diced (optional)
2 eggs
1 cup white whole wheat flour or all-purpose flour
2 tablespoons cilantro, finely chopped
½ teaspoon salt, or to taste
2–4 tablespoons olive oil for frying
Optional: Lime juice and extra cilantro for serving
Instructions
In a large bowl, mash the corn kernels until slightly broken down and juicy. Optionally, pulse in a food processor for a few seconds.
Add jalapeño, eggs, flour, cilantro, and salt to the corn and mix well using a sturdy utensil.
Heat olive oil in a skillet over medium heat. Drop heaping tablespoons of corn batter into the skillet, flattening slightly.
Cook each fritter for about 3 minutes on each side until golden brown and cooked through.
Serve hot, garnished with additional cilantro and a squeeze of lime juice.
