Ingredients

  • 3 to 4 pounds corned beef with spice packet
  • 1 tbsp Dijon mustard
  • 3 cloves garlic, finely minced
  • 2 tbsp brown sugar
  • ½ tsp coarse ground black pepper
  • ¼ tsp fennel seeds
  • 1 cup apple juice or apple cider
  • 2 tbsp apple cider vinegar

Instructions

1️⃣ Season the Corned Beef

  1. Remove the meat from the package and pat it dry. Discard the brine.
  2. Rub 2 tablespoons of Dijon mustard on the top (fatty side) of the corned beef.
  3. Mix the spice packet with minced garlic, brown sugar, black pepper, and fennel seeds. Sprinkle this mixture on top of the mustard-coated corned beef.

2️⃣ Slow Cooker Instructions

  1. Pour the apple juice (or apple cider) and apple cider vinegar into the slow cooker.
  2. Add the prepared corned beef, seasoned side up, to the pot of your slow cooker.
  3. Cook on low for 6-7 hours.
  4. Just before serving, place the corned beef on a small foil-lined sheet pan and place under a broiler (6-7 inches away) for 5-6 minutes to caramelize and crisp the top. Keep an eye on it, as it browns quickly.

3️⃣ Oven Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Pour the apple juice or apple cider and apple cider vinegar into the bottom of a roasting pan.
  3. Add the prepared corned beef, fat side up, and cover the pan with a lid or aluminum foil.
  4. Cook for about 50 minutes per pound, or until the internal temperature reaches 145°F (63°C).
  5. Remove the cover and place the pan under the broiler for 5-6 minutes, or until your corned beef is browned and crispy.
