Crispy Fried Zucchini

Welcome back to my blog! Today, I’m excited to share a delicious and easy-to-make appetizer: Crispy Fried Zucchini. These golden, crunchy zucchini slices are perfect for any occasion and can be served with your favorite dipping sauce. Let’s get started!

Ingredients

For the Zucchini:

  • 2 medium zucchinis, sliced into 1/4-inch rounds 🥒
  • 1 cup all-purpose flour 🌾
  • 3 large eggs, beaten 🥚
  • 1 cup Panko breadcrumbs 🍞
  • 1/4 cup grated Parmesan cheese 🧀
  • 1 tablespoon Italian seasoning 🌿
  • Salt and pepper to taste 🧂
  • Vegetable oil for frying 🛢️

Instructions

1️⃣ Prepare the zucchini: Trim the ends of the zucchinis and slice them into 1/4-inch rounds. Pat the slices dry with paper towels to remove any excess moisture. 🥒

2️⃣ Set up the dredging station: Set up three shallow dishes. Place the flour in the first dish. Beat the eggs in the second dish. In the third dish, combine the Panko breadcrumbs, grated Parmesan cheese, Italian seasoning, salt, and pepper. 🍽️

3️⃣ Coat the zucchini: Dredge each zucchini slice in the flour, then dip it in the beaten eggs, and finally coat it with the breadcrumb mixture, pressing lightly to ensure the breadcrumbs adhere. Repeat this process for all the zucchini slices. 🧀🥚

4️⃣ Heat the oil: In a large skillet, add enough vegetable oil to cover the bottom (about 1/4 inch). Heat the oil over medium heat until it reaches 350°F (175°C). 🌡️

5️⃣ Fry the zucchini: Add the zucchini slices to the skillet in batches, ensuring not to overcrowd the pan. Cook each slice for 2-3 minutes per side or until they are golden brown. Once cooked, transfer the slices to a paper towel-lined plate to drain any excess oil. 🥘

6️⃣ Serve: Enjoy the crispy fried zucchini warm, with your favorite dipping sauce such as ranch or marinara. 🍽️

Tips

  • Healthier Option: For a healthier version, you can bake the breaded zucchini at 400°F (200°C) for 18-20 minutes or until crispy. Alternatively, you can use an air fryer at 375°F (190°C) for about 8 minutes.
  • Serving Suggestions: These crispy zucchini slices are perfect as an appetizer, snack, or side dish. They pair wonderfully with a variety of dips, so feel free to get creative!
