  • 4 large russet potatoes, washed and cut into wedges
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or lightly grease it.
  2. Cut the potatoes into approximately 8 wedges each and soak them in cold water for 20-30 minutes to remove excess starch, then drain and pat dry.
  3. In a large bowl, mix the olive oil, minced garlic, Parmesan cheese, paprika, oregano, garlic powder, onion powder, salt, and pepper. Add the dry potato wedges and toss until they are evenly coated.
  4. Lay the seasoned potato wedges on the prepared baking sheet in a single layer, skin-side down.
  5. Bake for 35-40 minutes, flipping halfway through, until the wedges are golden and crispy.
  6. Sprinkle additional Parmesan cheese and chopped parsley over the baked wedges before serving hot with your favorite dipping sauce.
