1 ½ cups flour, plus 2 tablespoons as needed
1 teaspoon baking powder
2 teaspoons paprika
1 teaspoon garlic powder
2 teaspoons salt
1/2 teaspoon pepper
1 12 oz can seltzer water
1 large onion
Oil for frying


Instructions

Optional: Soak onions in ice water for 15 minutes and pat them completely dry before frying.
Place cooling racks over a baking sheet next to your frying area.
Peel the onion and position it so the stem faces outward. Slice into ½ inch thick rings and separate.
Toss onion rings in cornstarch to help the batter adhere better and to absorb moisture.
In a mixing bowl, whisk together the flour, baking powder, paprika, garlic powder, salt, and pepper. Gradually pour in seltzer water, stirring continuously, to form a batter similar to thin pancake batter.
Heat oil to 365-375°F. Dip onion rings in batter, shake off excess, and gently lower into oil.
Fry for about 1 minute + 20 seconds, flip, and cook another 45 seconds or until golden brown.
Remove and place on cooling racks. Serve with your choice of dipping sauce.
