- 4 chicken fillets, boneless, skinless

- ¼ cup olive oil
- 2 whole eggs
- ½ cup all-purpose flour
- 2/3 cup dry bread crumbs
- 1/3 cup Parmigiano-Reggiano cheese, freshly grated
- ½ tsp fresh or dried oregano
- ½ tsp fresh or dried thyme
- 1/3 tsp dried rosemary
- ½ tsp dried sage
- ¼ tsp garlic powder
- A pinch of paprika powder
- ½ tsp black pepper
Instructions
- Prepare the Chicken Pat the chicken fillets dry and season both sides with salt and black pepper. Pound the chicken to ½ inch thickness for even cooking and better absorption of flavors.
- Set Up Coating Stations Create a three-bowl coating station. In the first bowl, place the all-purpose flour. In the second bowl, whisk the eggs seasoned with salt and pepper. In the third bowl, combine the breadcrumbs, grated Parmigiano-Reggiano, herbs, garlic powder, paprika powder, salt, and black pepper.
- Coat the Chicken Coat each chicken fillet first in flour, tapping off any excess. Dip it next in the egg wash, and finally, coat it generously with the breadcrumb mix. Press gently to adhere the breading to the chicken.
- Cook the Chicken Heat olive oil in a large frying pan over medium heat. Once hot, add the breaded chicken and cook for 3-4 minutes on each side or until each side is golden brown and crispy.
